A simple source of complete protein

Ingredients:
- ½ c of black beans, rinsed
- ¼ fresh lime
- ½ c rice, uncooked
- 1 tsp chili powder
- ½ tsp ground cumin
- 1 Tbsp chopped green onion
- ½ c plain greek yogurt or light sour cream
- Tortilla chips for dipping
Directions:
- Cook rice according to package directions.
- In deep skillet, add beans, lime juice, chili powder and ground cumin. Cook over medium heat 7-10 minutes. Stir while cooking.
- Remove skillet from heat, add cooked rice. Add ⅓ cup of greek yogurt (or sour cream) and green onions. Combine and pour in serving bowl.
- Serve with extra plain greek yogurt (or sour cream) and tortilla chips!
