Pumpkin Pie Overnight Oats

Ingredients:

  • 1/3 cup old-fashioned rolled oats (gluten-free, if needed)
  • 1/3 cup pumpkin puree
  • 1/3 cup almond milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon pure maple syrup
  • Toppings: chopped pecans, pure maple syrup

 

Directions:

  1. Place all the ingredients except toppings in a jar or other container with a tightly fitting lid and give them a good stir.
  2. Cover and refrigerate overnight or at least 5 hours. In the morning, add additional liquid if you’d like.
  3. Once you achieve the desired consistency, add the toppings.
