Ingredients:
- 3 boneless, skinless chicken breast
- 3 tsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 garlic cloves, chopped
- 1 yellow onion
- 1 red or green bell pepper
- 3 small carrots
- 1 c zesty Italian dressing
Directions:
- Preheat oven to 350 F.
- Put chicken in ½ c of Italian dressing to marinade while vegetables are prepped.
- Chop garlic and slice onion, pepper and carrots.
- Place 1 piece of chicken in the center of a piece of aluminum foil (large enough to wrap up chicken in).
- Drizzle with 1 tsp of olive oil, sprinkle with salt and pepper and arrange veggies on top of chicken.
- Spoon 1-2 Tbsp of Italian dressing over chicken and veggies and wrap it up, sealing the foil.
- Repeat steps 4-6 for remaining chicken breasts and veggies.
- Place foil packets in the oven for 35-40 minutes or until chicken reaches an internal temperature of 165 F.
