An inexpensive and versatile meal in minutes!

Ingredients:
- 4 Flour tortillas
- 1 can black beans
- 2 bell peppers (any color)
- 1 ½ c shredded cheese (try Pepper Jack for an added kick)
- Optional additions or toppings: corn, avocado, tomatoes, salsa, plain greek yogurt, cooked and shredded chicken
Directions:
- Drain and rinse black beans and dice bell peppers.
- Heat a medium saute pan to medium heat and lay one tortilla down in the pan.
- Sprinkle some cheese on half of the tortilla. Follow with ½ c of black beans, ½ c bell pepper and slightly more cheese.
- Fold tortilla in half. Once the tortilla is brown on one side, flip it over to brown the other side and melt the rest of the cheese.
- Repeat steps 2-4 with your remaining ingredients.
- Serve with toppings of your choice.
