Black Bean Dip

A perfect hearty dip to pair with chips for an appetizer.

Ingredients:​

  • 1 can black beans​
  • ½ c onion​
  • 2 garlic cloves​
  • ½ c tomato​
  • 1 tsp olive oil​
  • ⅓ c mild picante sauce (or salsa)​
  • ½ tsp ground cumin​
  • ½ tsp chili powder​
  • ¼ c shredded pepper jack cheese​
  • ⅛ c fresh cilantro, chopped​
  • 1 Tbsp fresh lime juice​
  • Blue corn tortilla chips​

Directions:​

  1. Drain and rinse black beans.  Place in a bowl and partially mash until chunky.​
  2. Chop onion, mince garlic and dice tomatoes.​
  3. Heat oil in medium saute pan over medium heat.  Saute onion and garlic in pan for 4 minutes (until tender).  Add beans, tomato, picante sauce, cumin and chili powder.  Cook for 5 minutes, stirring constantly.  Remove from heat.​
  4. Add cheese, cilantro and lime juice to black beans, mixing in well.​
  5. Serve warm with tortilla chips.​
