A perfect hearty dip to pair with chips for an appetizer.

Ingredients:
- 1 can black beans
- ½ c onion
- 2 garlic cloves
- ½ c tomato
- 1 tsp olive oil
- ⅓ c mild picante sauce (or salsa)
- ½ tsp ground cumin
- ½ tsp chili powder
- ¼ c shredded pepper jack cheese
- ⅛ c fresh cilantro, chopped
- 1 Tbsp fresh lime juice
- Blue corn tortilla chips
Directions:
- Drain and rinse black beans. Place in a bowl and partially mash until chunky.
- Chop onion, mince garlic and dice tomatoes.
- Heat oil in medium saute pan over medium heat. Saute onion and garlic in pan for 4 minutes (until tender). Add beans, tomato, picante sauce, cumin and chili powder. Cook for 5 minutes, stirring constantly. Remove from heat.
- Add cheese, cilantro and lime juice to black beans, mixing in well.
- Serve warm with tortilla chips.
