Everyone will say… “What’s in these?!”

Ingredients:
- 1 small bag of cauliflower, chopped
- 2 Tbsp olive oil
- ½ packet taco seasoning
- Tortillas or hard shell tacos
- Desired toppings (cheese, lettuce, tomato, sour cream, avocado)
Directions:
- Put chopped cauliflower in a frying pan with 2 Tbsp of olive oil.
- Cover with a lid and cook over low/medium heat for 3-5 minutes (until cauliflower is tender).
- Add ½ packet of taco seasoning of your choice and cook for another 3 minutes.
- Separate cauliflower into 4 equal amounts and place in hard or soft taco shells.
- Add your desired toppings! (lettuce, cheese, tomatoes, sour cream, avocado, etc.)
- If desired, add a cooked protein (tofu, chicken, beans or fish).
