Ingredients:
- 1 lbchicken breasts
- 1 c tomato sauce (more if needed)
- ½ c shredded mozzarella cheese
- 2 eggs, scrambled
- ½ c flour
- 1 c Italian seasoned bread crumbs (or panko)
Directions:
- Preheat oven to 375 ˚F.
- Pound chicken to ½” thickness.
- Place eggs, flour, and bread crumbs into separate bowls.
- Dip chicken in flour, and then into eggs, and then into breadcrumbs.
- Place chicken on a baking sheet lined with parchment paper and bake for 25 minutes.
- Remove chicken from oven and cover in sauce and cheese.
- Return to oven and bake for another 5 minutes, until cheese is melted and chicken is 165 ˚F.
