Ingredients:
- 2 red peppers, sliced
- 2 yellow peppers, sliced
- 2 small red onions, sliced
- 1 boneless, skinless chicken breast
- 1 can black beans, drained and rinsed
- 2 cups cooked brown rice
Chipotle Lime Sauce:
- 1⁄2 c olive oil
- 1⁄2 c lime juice
- 1⁄2 c honey
- 1 Tbsp chopped garlic
- 1 tsp chipotle powder
- 1 tsp cumin
- Salt, to taste
- Pepper, to taste
Directions:
- Preheat oven to 425 ̊F/220 ̊C.
- Spray a parchment paper-lined baking sheet with cooking spray.
- Place the red pepper, yellow pepper, and red onion on the sides of the baking sheet. Set aside.
- Mix together ingredients for the chipotle lime sauce and set aside 2 Tbsp.
- Place chicken in the middle of the pan and pour the chipotle lime sauce over the chicken breast and veggies.
- Bake for 25 minutes.
- Serve with reserved sauce.
