Chipotle Lime Chicken with homemade sauce!

Ingredients:​

  • 2 red peppers, sliced​
  • 2 yellow peppers, sliced​
  • 2 small red onions, sliced​
  • 1 boneless, skinless chicken breast​
  • 1 can black beans, drained and rinsed​
  • 2 cups cooked brown rice

Chipotle Lime Sauce:​

  • 1⁄2 c olive oil​
  • 1⁄2 c lime juice​
  • 1⁄2 c honey​
  • 1 Tbsp chopped garlic​
  • 1 tsp chipotle powder​
  • 1 tsp cumin​
  • Salt, to taste​
  • Pepper, to taste

Directions:​

  1. Preheat oven to 425 ̊F/220 ̊C.​
  2. Spray a parchment paper-lined baking sheet with cooking spray.​
  3. Place the red pepper, yellow pepper, and red onion on the sides of the baking sheet. Set aside.​
  4. Mix together ingredients for the chipotle lime sauce and set aside 2 Tbsp.​
  5. Place chicken in the middle of the pan and pour the chipotle lime sauce over the chicken breast and veggies.​
  6. Bake for 25 minutes.​
  7. Serve with reserved sauce.​
