A simple, healthy dinner!

Ingredients:
- 2 (15-ounce) cans of black beans (drained)
- (Optional) 2 strips bacon (diced)
- ½ c minced onion
- ½ c minced green pepper
- 2 cloves garlic, minced or 1 tsp garlic powder
- 1 bay leaf
- ½ c chicken broth
- 1 tsp vinegar
- Salt and black pepper to taste
- (Optional) 1 dash hot sauce to taste
Directions:
- Cook bacon in a pot over medium heat until almost crispy. Add onion and green pepper and cook for about 5 minutes (until translucent). Mix in garlic and bay leaf and cook for about 2 more minutes.
- Stir black beans, chicken broth, vinegar, salt, pepper and hot sauce into the onion mixture. Cover and let simmer for about 10-15 minutes. Add more chicken broth if soupier beans desired.
- Remove bay leaf and serve with rice.
