Easy Brazilian Black Bean Stew

A simple, healthy dinner!

Ingredients:​

  • 2 (15-ounce) cans of black beans (drained)​
  • (Optional) 2 strips bacon (diced)​
  • ½ c minced onion​
  • ½ c minced green pepper ​
  • 2 cloves garlic, minced or 1 tsp garlic powder​
  • 1 bay leaf​
  • ½ c chicken broth​
  • 1 tsp vinegar​
  • Salt and black pepper to taste ​
  • (Optional) 1 dash hot sauce to taste​

Directions:​

  1. Cook bacon in a pot over medium heat until almost crispy. Add onion and green pepper and cook for about 5 minutes (until translucent). Mix in garlic and bay leaf and cook for about 2 more minutes. ​
  2. Stir black beans, chicken broth, vinegar, salt, pepper and hot sauce into the onion mixture. Cover and let simmer for about 10-15 minutes. Add more chicken broth if soupier beans desired.​
  3. Remove bay leaf and serve with rice.
