A delicious one-pot meal which makes easy clean up!

Ingredients:
- 16 oz whole wheat rotini pasta
- 3 chicken breasts (12 oz) chopped into 1-inch cubes
- 2 Tbsp olive oil
- 14 c chopped kale
- 1-28 oz can diced tomatoes
- 2 medium onions, chopped
- 1 Tbsp minced garlic
- 4 Tbsp pesto
- 1 Tbsp Italian seasoning
- 1 ½ tsp salt
- 1 tsp crushed red pepper (add more if you want more spice)
- 8 c water
- Finely shredded parmesan cheese for garnish
Directions:
- Add 2 Tbsp of olive oil to sauce pan and heat over medium heat. Add chopped chicken and cook for 3-4 minutes, until the edges get slightly brown. Add pasta, chopped kale, tomatoes, onion, garlic, pesto, Italian seasoning, salt and crushed red pepper to the large pot.
- Stir in water, cover with the lid and bring to a boil over high heat.
- Continue to boil, stirring frequently, until the pasta is cooked and the water has almost evaporated, 10-12 minutes.
- Remove from heat and let stand, stirring occasionally, for 5 minutes.
- Serve garnished with parmesan, if desired.
