One-Pot Chicken and Kale Pasta

A delicious one-pot meal which makes easy clean up!

Ingredients:​

  • 16 oz whole wheat rotini pasta​
  • 3 chicken breasts (12 oz) chopped into 1-inch cubes​
  • 2 Tbsp olive oil​
  • 14 c chopped kale​
  • 1-28 oz can diced tomatoes​
  • 2 medium onions, chopped​
  • 1 Tbsp minced garlic​
  • 4 Tbsp pesto​
  • 1 Tbsp Italian seasoning​
  • 1 ½ tsp salt​
  • 1 tsp crushed red pepper (add more if you want more spice)​
  • 8 c water​
  • Finely shredded parmesan cheese for garnish

Directions:​

  1. Add 2 Tbsp of olive oil to sauce pan and heat over medium heat.  Add chopped chicken and cook for 3-4 minutes, until the edges get slightly brown.  Add pasta, chopped kale, tomatoes, onion, garlic, pesto, Italian seasoning, salt and crushed red pepper to the large pot.​
  2. Stir in water, cover with the lid and bring to a boil over high heat.​
  3. Continue to boil, stirring frequently, until the pasta is cooked and the water has almost evaporated, 10-12 minutes.​
  4. Remove from heat and let stand, stirring occasionally, for 5 minutes.​
  5. Serve garnished with parmesan, if desired.​
