Smashed Chickpea and Avocado Salad Sandwich

This snack is super easy and quick to make for avocado and vegan lovers!

Ingredients:​

  • 1 15-oz. can chickpeas, rinsed and drained​
  • 1 large ripe avocado, pitted and sliced​
  • ¼ c fresh cilantro, chopped (optional)​
  • 2 Tbsp green onions, chopped​
  • Juice of 1 lime​
  • Salt and pepper, to taste​
  • Bread of your choice​
  • Optional toppings: lettuce, tomato, etc.

Directions:​

  1. In a medium bowl, smash the chickpeas and avocado together using a fork or large spoon.​
  2. Stir in the cilantro, green onions and lime juice. ​
  3. Season with salt and pepper to taste.​
  4. Spread onto bread and top with your favorite sandwich toppings.
