Vegan BBQ Jackfruit Flatbread with Slaw

Ingredients:​

  • 1 can of jackfruit in water​
  • jackfruit seasoning (1/4 tsp each: chili powder, garlic powder, paprika)​
  • ½ c BBQ sauce (Minimalist Baker has a good vegan BBQ sauce) ​
  • ¼ c soy shredded cheese blend (or real cheese)​
  • naan bread ​
  • olive oil ​
  • salt and pepper​

Slaw​

  • ½ c cabbage and carrot blend ​
  • ¼ c Trader Joe’s vegan spread (or mayo)​
  • 2 tsp Apple cider vinegar ​
  • Salt and pepper to taste​

Directions:​

  1. Preheat oven to 375°F.​
  2. Combined drained jackfruit and seasoning in a bowl with salt and pepper to taste.​
  3. Cook seasoned jackfruit in olive oil over medium heat.​
  4. After 10 minutes, add the BBQ sauce and simmer for 20 minutes, covered. ​
  5. While the jackfruit is cooking, drizzle olive oil on naan bread and sprinkle with cheese.​
  6. Place naan bread in the oven for 10 minutes. ​
  7. On the side, mix together the slaw ingredients. ​
  8. When the jackfruit is cooked, use a fork to “shred” it for a pulled pork texture​
  9. Add the BBQ jackfruit on top of the naan bread and put back into the oven for an additional 5 minutes.​
  10. Top with the slaw and add more BBQ if desired. ​
